Bavarian pretzels that are gluten-free, vegan AND delicious!
Warm up the milk over medium-low heat, then add to bowl and mix in liquid sweetener and yeast. Set the bowl aside for 15 minutes while the yeast activates.
Add the oat flour, brown rice flour, potato starch, xantham gum and corn starch into a new bowl. Add in the yeast mixture and stir with a spatula until the dough able to form into a ball. Knead the ball for 2 more minutes (sprinkle oat flour onto hands as needed if the dough is sticky). Add olive oil to the bottom of the bowl to avoid sticking, cover the bowl with a towel and set aside for 60 minutes to allow the dough to rise.
Add the water and baking soda into a pot and bring to a boil.
Take the dough and separate it into 8 pieces. Roll and knead each piece to ensure the dough isn’t cracking. Roll each piece into a long rope that is ~18″ long and form into your desired pretzel shape.
Use a spatula to put each pretzel in the boiling water for 30 seconds, then put on a baking sheet for 10 minutes. Add salt topper if desired (not included in nutritional information below).
Bake the pretzels in the oven to your desired pretzel crispiness and, once slightly cooled, enjoy!
