Vegetable Curry

Another flavorful veggie main dish that leaves its final result up to your creativity, preference and taste when it comes to ingredients, flavors and spice level.

I use a veggie steam pot to precook all the vegetables and a large frying pan to prepare the sauce. For the rice I use a standard rice cooker.

Add the rice and water into the rice cooker and hit start.

Cut up the veggies of your choice – we like cauliflower, broccoli, onions, bell peppers and potatoes – and steam them in the veggie steamer. Start with the potatoes, they take the longest (30 min), then add the cauliflower (20 min) and lastly, the bell peppers (15 min).

For the sauce, I cut the onion in small cubes and mix it with the minced garlic, ground ginger, red pepper flakes and all the other spices in the frying pan until the onions start to turn brown. Then I add almond milk, stir the sauce with a kitchen spatula and let it simmer at low heat. The spice aroma in the kitchen at this point is just mouthwatering and sneeze inducing. Once the veggies are done I move them from the steamer into the frying pan, mix everything up and let it all simmer for another 20 min while stirring it.

Once done, I present it in a bowl on a bed of rice.
